The product takes its' name from the old Cumberland pig, heavy boned, slow to mature and extremely hardy the creature became a symbol of the region, but was, sadly, allowed to die out in the early 1960's.

We therefore have to be content with its' close genetic cousins - but that gives us wonderful breeds like the Large Black, Welsh, and magnificent Gloucestershire Old Spot. And of course we put the whole pig to sausage and nothing else
- no additives whatsoever.

An 'Old County Original' consists of mature pork plus one or two seasonings, in a natural casing, of course.
