Game

As a country dweller game has long been an important part of my life - and my larder - and I have always granted 'game status' to both rabbits and pigeons (although neither is officially game ), and those humble, totally wild, creatures have formed the basis of as many glorious meals every bit as much as have grouse partridge and pheasant - all of which are effectively farmed these days.

The bit of world I am fortunate enough to occupy is rich in all types of game - from red deer in (reasonable) abundance in the Lakeland woodlands, to hare on the low fells of the north Pennines, waterfowl on the wetlands around the Solway Firth and, of course wonderful salmon and sea trout (haaf netted when the season permits) from the estuary and the Border Esk.

I tend to pay a bit more than 'the going rate' for the game I buy in - but that means I can be choosy. So I am!

Fish

In the spring of 2004 we pushed the boat out a bit on the fish side and took over part of a local fishmonger's business - so now we can offer a full selection from the wonderful sea harvest available from around our shores.

And "yes" - we do only deal in the very best available.

So happy cooking; because life is too short for cheap food!
