“Old County Original” Cumberland Sausage is made using 100% rare breed, free-range pork. We use ALL the meat from the ENTIRE pig – rather than just the belly & shoulders, and add nothing to it other than our own freshly mixed seasoning. No additives means ENTIRELY WHEAT AND GLUTEN FREE conforming to the rigorous standards as laid down by the Charity Coeliac UK as well as making for a tastier, altogether meatier, sausage-tasting sausage.

Extinct for more than 40 years, it was the old Cumberland Pig, heavy boned and slow to mature, that gave its name to our regional delicacy now enjoyed throughout the country and indeed the world. By using only genetically similar pigs to the Cumberland; Gloucestershire Old Spot, Large Black &c. we believe we have recreated as closely as possible the ‘genuine’ article, and can remain true to our friends in the RBST as well. At BCF we are dedicated to Keeping the Breeds Alive. (And any way, apart from being darker in colour ‘proper’ pig meat is much more
succulent than that from ‘commercial’ animals; rather like pork used to taste when we were children, in fact!)

Why “Free Range”?
We don’t condemn ‘factory’ farming methods, we just don’t happen to like them. Pigs that are allowed to do ‘piggy’ things, grubbing and rooting about, grow into happier (and tastier!) porkers as a consequence – so everyone benefits!
