Cumberland Sausage Loaf Recipe

Cumberland Sausage Loaf
gas7 / 350f / 180c

1 x yard ‘Old County Original’ Cumberland sausage with skin removed.
75g fresh breadcrumbs
2 x eggs beaten
2 x tblsp fresh chopped parsley
1 x teasp garlic granules
½ x teasp celery salt
1 x teasp sage
salt and pepper
puff pastry

Method
Roll out puff pastry to form a large oblong. Mix all ingredients together, lay sausage mixture on top of puff pastry. Moisten edges of pastry, fold pastry to form a giant sausage roll. Stand on a greased baking tray with pastry joints underneath. Brush with a little beaten egg or milk. Cook in oven gas 7 for 15 minutes; reduce the temperature to gas 3; cook for further 1¼ hours.

Serve hot with seasonal vegetables or cold with salad.
